Favorite Healthy Meal of the Summer

How is your week going? There's been a lot of exciting things happening around here lately, and it's keeping us busy.

We recently found out that baby #3 will be here in February, and we're excited to be growing our family again! (If you're curious what a natural pregnancy looks like for me, I'll be keeping everyone up-to-date over on Instagram.)

While I definitely haven't been cooking quite as much as usual these days, I've still been loving making all my favorite summer meals this month.

In college, my roommate and I made enchiladas all the time (I don't think our landlords were as much of a fan of it as we were😂), and they're still one of my favorite dishes. Over the years I've kept modifying my recipe, and now these are my all-time favorite enchiladas I could eat every day!
