It seems like it's usually about this time in January when all that New Year energy from a couple weeks ago starts to fade.

Between kids’ sleep issues, being in my third trimester, and trying to get the house back to normal after the holidays, I’ve definitely struggled to get everything done that I want to (looking at you, long list of recipes to photograph😆).

If you're feeling the same way, just know you're not alone. Winter is such a natural time to slow down and focus on the simple, most important things, even if that means not checking everything off your list right now.

With a hard-working husband and two growing toddlers, one of my biggest daily priorities is having a nourishing dinner on the table. It doesn’t have to be fancy - just something warm and filling.

One of my favorite cozy meals I keep coming back to is this sweet potato cottage pie.

It's made with simple kitchen staples like ground beef, vegetables, and tomato sauce, and it’s hearty, comforting, and always a family favorite. As a bonus, it makes a big batch so we always have leftovers for another easy meal!
