I've never been one for spring cleaning, but this year it's happened naturally. Between getting settled in our home, traveling, and a new baby, home organization had definitely been neglected, and I'd finally had enough!

As I’ve been working to bring our home back to a peaceful, orderly state, I’ve had less time for cooking. So lately, I’ve been making simple, one-dish meals as often as possible.

I made this stuffed pepper skillet last weekend, and it was the perfect way to end a busy Saturday. It's so easy, hearty, and delicious and includes meat, rice, and veggies for a complete meal in a skillet.
